Recipe: Roast Broccoli Stem Hummus

Broccoli stems are often discarded, but they are delicious in many dishes like soups. Here's a waste-free roasted broccoli stem hummus recipe that's healthy, kind to the planet and might even save money (and is delicious). We recommend cooking it when you're using broccoli florets for something else so there's no waste.

Ingredients:

– 2 cups of broccoli stems,

– 2 cloves of garlic

– 4 tablespoons tahini

– 2 tablespoons lemon juice

– 1 tablespoon olive oil

– Water, enough to thin hummus to desired consistency

– Salt and pepper to taste

Method:

  1. Preheat the oven to 180 degrees C.

  2. Roughly chop the broccoli stems and place on a baking sheet, lined with a baking paper or a silicon mat.

  3. Drizzle with olive oil and salt to taste. Toss until combined.

  4. Roast the broccoli in the oven for 40 minutes or until cooked through, stirring at 20 minutes.

  5. Place garlic in a food processor and blend until the garlic is minced then add the roasted broccoli stems, tahini, and lemon juice, blending until combined. Add water until you achieve your desired consistency.

  6. Add lemon juice or olive oil to taste and garnish with cumin or sumac

  7. Enjoy as a dip or on crackers.

This hummus should last a few days in the fridge.
