Recipe: Pineapple Skin Iced Tea
As part of our Open Sauce project, we’re bringing you the best of our Cooler Than Compost recipes, simple ways to create tasty treats out of offcuts and scraps of food that would usually end up in the bin. Try this refreshing tropical drink you can enjoy hot or cold.
Ingredients:
- Skin from one pineapple
- One spent citrus fruit (you can use the juice, too, if you like)
- A piece of fresh ginger, sliced
- A sprig of rosemary
- Fresh turmeric (or a small pinch of ground turmeric)
- One cinnamon stick (optional)
- 1-2 TSP honey or maple syrup (optional)
Method:
1. Wash the pineapple skin, cut the pineapple flesh out and eat (or freeze for later).
2. Put the skin in a pan with boiling water and all the other ingredients, and simmer for 1 hour.
3. Strain the liquid and drink it hot (be careful!) as tea*. Or, cool down in the fridge for iced tea**.
*You could add some whiskey to make this into a hot toddy.
** Some vodka or gin could elevate this tea into a refreshing cocktail!
